Well, the right foot was in more of a holder. His left, however, was in what controlled the tail and had more holdings, much like a horse's stirrup. His right would have easily slid out while his left... not so much.

But if it's anything like a horse's it would still have some metal and details, though not as detailed as the left, but good enough too keep both feet stable on Toothless. I doubt Hiccup would skimp on sturdiness. And then going at the speed he was going, even a weak stirrup/holder can cause damage or could be tangled and have his leg ripped from it.

Hm... OH! Maybe the foot holds didn't break his leg! Maybe the left foot was pulled out of socket slightly when he was thrown off and when he smashed into the tail, it's possible that he hit it on there, breaking it. *only slight possibility*

Well, now that it's being mentioned... I don't think I see Hiccup's legs that well in the short moment you can see them, when Toothless lifts his wings up. This is probably on purpose, they didn't want a "PG-13" rating. XD There's also the exchange 1 minute later that suggests the leg is already gone by that time.
"You brought him back alive!" "Well, most of him."
They also make it a point not to show Hiccup's lower body at that scene.
I'm going to go ahead and say either Toothless chomped it off in an effort to catch him, or Toothless was able to protect Hiccup from the giant fireball, but his leg got BBQ'd off. Either way, he should be glad he was unconscious. XD

I think he hit that tail hard enough to be knocked out, and he has a bruise when he wakes up. So concussion HO!

I like all these theories, though I don't have one of my own. All I have to say is this is the first time I remember a character losing a limb in a story as a repercussion of their actions, aside from one of the Sally Lockheart books.
I did tell my sister about one of the theories though. The conversation basically went with me saying, "Yeah, some have said from experience it hurts to get your foot caught in the stirrup when you fall off a horse. Now imagine riding one of the fastest dragons known to the population, hitting something like a wrecking ball, and then getting your foot caught..."
She instantly groaned and held onto her ankle as if she felt the pain. Whatever the heck did happen, it was pretty gutsy of Dreamworks to do it (and I love them for doing it)

I'll just say it got burnt off. Though the possibilty that Toothless bit it off is still there. When Gobber throws in that 'Well, most of him anyway' it automatically tells you that, by this point, his leg was already gone. Or mostly gone. So I'd say it was either bit off or burnt off. My Gramps was in the army for years on end, and he says it is possible to completely burn a leg, like the bone and everything, so I'd say that is the most likely possibility. Pure opinion though, so whatevs.

But why only one leg as opposed to other appendages? That was quite the massive fireball, I would assume his whole body would have gotten the Harvey Dent treatment.

Maybe toothless, being more fireproof on the outside, was able to wrap around him, and save the rest of his body from getting BBQ'd off? He did have him curled up in a ball, under his body. Like he had cocooned him, in a way.

I assumed it had something to do with the saddle thingy he designed to help Toothless fly. He had to use his left leg to adjust the tail wing he'd made earlier, and when the smoke cleared and we saw Toothless for the first time after the fireball, that whole contraption Hiccup had made was pretty mangled. I thought it had something to do with that.
But of course I could be wrong.
