This is just a random thought I had while watching the trailer to the sequel movie.
I'm assuming the woman we see in the trailer who says "a mother never forgets" is actually Hiccup's mother. I don't know for certain yet, as I'm trying to avoid as many spoilers as possible!
But if she is, it opens up an interesting possibility of Hiccup's past.
We know Stoick hated dragons in the past, but what if it was actually more personal then "they are trying to destroy us, so we fight back"?
The theory I have is that when Hiccup's mother left to be with the dragons, Stoick didn't see what happened clearly and thought they carried her away to eat her.
That would certainly be enough reason for a lifelong vendetta, if (from his perspective), he watched dragons take his wife away to her death.
Also, it puts something from the series in a whole new light, the stuffed Dragon his mother made for him as a toy. What if it was more then just a random gift? What she was already involved with the dragons and was preparing Hiccup to do the same thing? As in, she wanted Hiccup to follow her path with the dragons and help her with the task when he grew older.

Yeah, I had thought as far back as when the first movie came out that Hiccup's mother had been "carried off" as well. This is mostly due to the fact that he was FAR more fervent about "finishing" the dragons than any other Viking we saw, even Gobber, who lost not one but two limbs to the critters.
I had even considered writing a fanfic at one point or another where she had actually survived somehow, though I couldn't really nail down a reason why she never came back so I shelved the idea. Going off to become a crazy dragon lady wasn't one I thought of, but it definitely explains it!
Though that raises the question: Why didn't she take Hiccup with her? From the way Hiccup reacts to the breast hat, I've always thought that she must have died/left when he was really tiny, and that he barely remembers her. It can't have been a light decision to leave him behind with a single father who hates the animals she loves so much, so I think I'll be unsatisfied if they don't address that issue.
Of course, that's assuming that the woman in the trailer really *is* his mother. She could be lying and/or delusional, after all. (And even if she is, I'm not necessarily going to bank on her being a true ally either. That just seems to straightforward, like a missed opportunity for drama.)
I had forgotten the dragon toy until you mentioned it. ^^; But yes, you have a point that it may have more significance than either Hiccup or Stoick ever thought--or may end up gaining more significance, if the lying/delusional theory is true. (If she's not his mother, then she wouldn't know about the toy at all, much less making it.) If she is his mother, then the toy is hardly random, particularly that it's a stuffed/plush toy: those are meant to be hugged and cuddled, not for the kind of rough play you'd expect a dragon toy to be among a culture that traditionally hunts the animals. On the other hand, specifically intending it as a message to follow in her footsteps seems just a bit of a long shot to me, especially if he was as young as I think he was when she left; there's just too much that changes in a person when they grow up. I think it's more likely that she did want him to have something dragon-y to associate with her, and wanted it to be something that cast them in a slightly positive light. No guarantee that he'd come to accept dragons in general, but at least there'd be one dragon he could see as a friend, even if it was imaginary.
TL;DR: Stoick believing his wife got carried off by dragons: Very likely! Woman in the trailer actually being Hiccup's mother: Somewhat likely, but not certain. Woman in trailer being a true ally: Somewhat likely, but not certain--especially if she's not actually his mother. Stuffed toy being a message: If she's not his mother, not likely at all. If she is, it's a bit unlikely.

Maybe she just knew Hiccup well enough to know that no matter what, he wasn't going to become a dragon killer like the others. I'm also speculating that she was going to teach him to be a Dragon Trainer when he got old enough, but something changed that forced her to leave before he was ready.
As to why she left him behind, I'm assuming whatever she was doing or where she was living was too dangerous to take a small child, so it would have been safer to leave him in the village with his father.
